Directions
Prep the Salmon: Pat the salmon steaks dry with paper towels. This helps the fish to sear properly. Season both sides of the salmon generously with salt and black pepper. If you like, you can add minced garlic or fresh herbs like thyme or rosemary at this stage for extra flavor.
Heat the Pan: Use a heavy-bottomed skillet or frying pan that's large enough to comfortably fit both salmon steaks without overcrowding. Heat the olive oil over medium-high heat. Allow the oil to become hot but not smoking.
Sear the Salmon: Place the salmon steaks in the hot pan, skin-side down. Allow them to cook without moving for about 3-4 minutes. This helps to create a crispy crust on the salmon.
Flip and Cook: Carefully flip the salmon steaks using a spatula. Cook the other side for an additional 3-4 minutes. You can check for doneness by using a fork to gently flake a small piece from the thickest part of the steak. The salmon should be opaque and easily flake apart. Be careful not to overcook it, as salmon can become dry if cooked too long.
Serve: Once the salmon is cooked to your desired level of doneness, remove it from the pan. Garnish with lemon slices and fresh herbs, if desired. Serve the pan-seared salmon steaks hot with lemon wedges on the side.
